Hi Onash
This is fairly simple if you are familar with the 12 frets away from your note theory. judging on what note you are on depends on where to pick the harmonic..
you must pick the harmonic 12 frets away from your current note.
when you pick the 12 fret harmonic by default you will hear the string you are picking off, only an octave higher.. now if you shift your notes, you will have to shift the fret you pick
example.
if you are on fret 5 (E) on the B string. go 12 frets away from fret 5 which is the 17th fret (also E) , place your first finger just over the 17 fret, (on the metal bar) and with your thumb pluck the string. and you will get your E an octave higher.
On Cesar's video of Manhattan at 1:10 as you pointed out, Cesar was doing the same only for a chord, and the notes in the chord are on different frets and so as you noticed Cesar's right hand he picks the different frets for the harmonics - following this simple rule
Hope this helps.
Regards.
